Fuego - Baked Empanadas

Tired of the corporate structure, we decided to launch FUEGO, a food trailer that would serve not only some well known classics, like tacos and burritos, but also wanted to test some Argentine things, like the choripán and the empanadas. 
So we gave it a go! April 2023 saw the launch of FUEGO - Charbroiled Latin Flavors in the Slumberland parking lot, next to Home Depot.
The Argentine food was received well, and in July 2023, we expanded our South American dishes by adding some additional empanada flavors and some sandwiches, all while eliminating the tacos & burritos (there are just too many of those trucks). Empanadas were starting to take off and the menu made it a lot easier for the small kitchen, but we really wanted to expand our empanada offerings and have them baked. The space didn't allow for an oven and the generator wasn't powerful enough for the oven we wanted. And we wanted a SUPER oven. An oven that would bake the empanadas SUPERFAST so we can bake them fresh to order.
In December 2023, we replaced some equipment and became what we wanted to be all along:
